Eastern to offer basic sausage making course Sept. 17
WILBURTON, OK (Aug. 31, 2016) – Eastern Oklahoma State College will offer a day-long “Fresh/Cooked Sausage Processing” course on Saturday, Sept. 17 beginning at 8:30 a.m. The continuing education course will be offered in Eastern’s meat processing laboratory in Wilburton.
Meat Science and Food Safety instructor Carrie Lockhart and Meat Plant Manager Gaylon Brannon will provide hands-on instruction in the production of different sausages. Fresh sausages to be covered include breakfast, Italian and Polish variations. Cooked sausage products such as salami will also be discussed. All recipes provided can be adapted to the production of deer sausages.
Pre-registration is required and the course will be limited to the first 25 registrants. Pre-registration for the course is open through Thursday, Sept. 15. The $25 registration fee will cover lunch, refreshments and educational materials.
